Leftovers

Some people don’t like leftovers. I don’t get it, because leftovers are the best! You spend time preparing a really good, healthy, tasty meal and then you get to eat that again later in the week without all the effort- or, you get to turn Tuesday’s dinner into something completely different for Thursday.

Don’t think of leftovers in terms of Thanksgiving, where you are stuck with loads of food for days and days. Think of leftovers as a free home cooked meal that you don’t have to prepare.

Some of the recipes I’ve listed on this site lend themselves to great leftovers. (Chicken and meatloaf are too obvious) For example:

Add your leftover grilled vegetables to an omelette, a sandwich, bruschetta, or add them to a giant salad for dinner. You can also add them to soup.

Greek Style Meatballs can be tossed with pasta on day two, or made into a sandwich, or added to soup and are even good cold.

If you make the Moroccan Chicken or the Chicken Marbella, that makes insane chicken salad (you chop it up and mix it with mayo) and also can be made into a dinner salad. Like most chicken, it tastes good hot or cold.  You could even experiment with ‘Mediterranean’ burritos if you have leftover Moroccan/Marbella chicken and grilled vegetables.

Basically, most leftover meat, fish and vegetables  can have a new life if they are tossed with pasta, made into a dinner salad, or just reheated with different side dishes.
