Greek Tomato Salad

You may recognize all my favorite foods in this dish. It’s a good salad because it keeps in the fridge and gets better and better, so all the trouble is worth it for a few meals.

Ingredients
1 pint grape/cherry tomatoes
1 cucumber
1 green pepper
1 red pepper
1/2 red onion
1/4 cup pitted kalamata olives
1/4 cup crumbled feta cheese (or more if you love feta)
Chopped fresh parsley and mint

Dressing
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
Juice of 1/2 lemon
1/2 teaspoon dried oregano
Salt (just a little because feta is salty)
Pepper

Instructions
Whisk the dressing in a large bowl
Chop all the veggies
Add everything to the bowl, and gently toss in dressing
