Brussel Sprouts with Gorgonzola

Brussels Sprouts are super easy and very filling. Plus, you can do a million things with them. This recipe calls for roasting.

Ingredients
Bunch of Brussels sprouts, maybe 1/2 pound
1-2 ounces Gorgonzola cheese
3-4 slices of bacon or pancetta, chopped into pieces (optional)
1/4 cup walnuts, pine nuts or pecans, chopped (optional)
2-3 tablespoons olive oil
Salt
Pepper

Instructions
Preheat oven to 425
Sautee bacon or pancetta but keep soft, set aside, discard fat
Trim and cut Brussels sprouts in half, or quarters if they are giant
Place in roasting pan or cookie sheet and toss with olive oil, salt and pepper and bacon/pancetta
Bake 15 minutes-20 minutes until beginning to caramelize
Remove from oven, toss again, then add crumbled Gorgonzola (to your taste), and nuts
Roast another 5 minutes until cheese and nuts are warmed through

Advanced tip: Brussels sprouts can also be sliced thin and sautéed (think sesame oil and soy sauce)  or sliced super duper thin and made into a salad (think lemons and shaved parmesan cheese)
