Brick Chicken

When you want the best chicken on earth, make this. The chicken needs 24 hours to marinate, so plan ahead. It’s worth it.

Ingredients
1 whole 3-4 pound chicken, butterflied (don’t worry, it’s pretty easy if you have a good knife)
Adobo Seasoning
1 cup cider vinegar
3 cups water
1 brick, covered in clean tin foil

Marinating Instructions
Butterfly the chicken
Sprinkle generously with the Adobe seasoning on all sides
Place chicken into a big ziplock baggie
Add the vinegar and the water
Close the bag
Place on a dish, in the fridge for 24 hours

Grilling Instructions
Preheat grill to 400
Remove chicken  from bag, and pat dry with paper towels (discard the liquid and the bag)
It is very important to pat the chicken dry or it will not crisp up
Sprinkle again with Adobo seasoning
Place skin side down on hot grill
Place cookie sheet on top and weigh it down with bricks
Cook for 15 minutes, then turn

Cook another 15-20 minutes
Let chicken rest 10 minutes before cutting into pieces

Advanced tip: You can swap out cider vinegar for red wine or other vinegar, and Adobo seasoning for other spices to create different flavors.
