Moroccan Chicken

Though it looks similar, this has entirely different flavor than Chicken Marbella. This dish uses a lot of cinnamon and ginger, so it sweet and very fragrant. Also, it only needs to marinate for an hour.
Ingredients

3 cloves garlic, chopped
2 tbsp oil
2 tsp cumin
2 tsp ginger, ground
1 tsp salt
1 tsp turmeric
1 tsp paprika
1 tsp cinnamon
1 tsp pepper, ground
8 chicken legs
2 tsp lemon rind, grated
½ cup olives
1 cup dates or apricots, chopped

Instructions

Mix garlic, oil, cumin, ginger, salt, turmeric, paprika, cinnamon and pepper in a bowl
Place chicken pieces in a big  ziplock baggie
Pour in the spice mixture into the bag and mush around to coat chicken
Leave in a cool place for at least 1 hour and up to overnight
Bake at 350F for 35 minutes, covered
Sprinkle over lemon rind, olives & dried fruit, cover and bake 10 more minutes
Advanced tip: You can cut out some prep time by looking for a ‘Moroccan Spice Blend’ in a fancy food store.
