Greek Style Meatballs

I love these because you can eat them hot or cold and make them into patties or balls. I don’t serve them with pasta like traditional meatballs, but on their own as a main course.
Ingredients

1 pound ground chicken or turkey or both
1/2 cup chopped parsley
1 cup finely chopped fresh spinach (or 1/2 bag of frozen)
1 clove of garlic, smashed and finely minced
Pinch of salt
Black pepper
Red pepper flakes to taste  (maybe 1/4 teaspoon)
¼ cup feta cheese crumbles
1/8 cup pine nuts (optional)

Instructions

Preheat oven or grill to 375
Gently mix all of the ingredients together and form the meat into 2 inch (largish) balls
For oven, cover cookie sheet with tin foil and lightly coat with olive oil
For grill, place them on a grill that has been brushed with oil
Cook the meatballs for 15-20 minutes, turning so they cook on all sides. (Grilling may not take that long)The more gently you mix the ingredients, the lighter the meatballs

Advanced tip: Play around with the proportions of spinach, parsley and feta until it is to your taste. Add some fresh mint to make it more Mediterranean.
